Thyme is a well-known annual herb with highly aromatic evergreen-like leaves. It is easily grown in average, dry to medium, well-drained soil in full sun. Loose, sandy or rocky soils with excellent drainage are best. Thyme is tolerant of dry, shallow rocky soils, and can handle drought conditions. In addition, it is not bothered by deer. It dislikes wet soils where it tends to rot. It is recommended to cut back plants to limit woody growth or to stimulate new growth. The leaves can be harvested throughout the summer as needed.
